Ingredients: 180g/6oz margarine, softened 180g/6oz caster sugar 180g/6oz self-raising flour 3 large eggs 1 tsp coffee essence Icing: 225g/8oz icing sugar 1 tsp coffee essence 1 tbsp milk Method: 1. Preheat the oven to 180°C/fan 160°C and grease and base line of 2 cake tins. 2. Put all ingredients for the cake in a mixing bowl and beat until well mixed. 3. Divide the mixture between the prepared tins and bake for 25-35 mins. Allow to cool. 4. Mix all the ingredients for icing together and beat until smooth. 5. Sandwich the two cakes with a little of the icing and pipe the remaining icing on top of the cake.
