Ingredients: 110g/4oz margarine, softened 180g/6oz caster sugar 4 large eggs 180g/6oz self-raising flour, sieved Filling and decoration: Warmed jam Caster and icing sugar Method: 1. Preheat the oven to 200°C/fan 180°C and line a swiss roll tin with greaseproof paper. 2. Put all the ingredients for the cake in a bowl and beat until well mixed. 3. Pour into the tin and bake for 10-12 mins. 4. Place a sheet of greaseproof paper on top of a damp tea-towel and sprinkle with caster sugar. 5. Turn out the swiss roll onto the sugared paper. 6. Remove the paper from the bottom of the cake and trim the edges of the cake. 7. Spread with warmed jam and roll up using the greaseproof paper as a guide. 8. When cold unwrap and sprinkle with icing sugar.
