Ingredients: 1 cup of strong tea 180g/6oz brown sugar 450g/1 lb mixed dried fruit 1 egg, lightly beaten 250g/9oz plain flour ½ tsp bread soda Method: 1. Put tea, sugar and dried fruit in a bowl, cover and leave to soak overnight. 2. Preheat the oven to 180°C/fan 160°C and grease a 2lb loaf tin. 3. Add the egg to the fruit mixture, then sieve the flour and bread soda together and fold into the mixture. 4. Turn into the prepared tin and bake for 1½ - 1¾ hours.
