Ingredients:  175g/6oz butter, softened 175g/6oz caster sugar 3 eggs 250g/9oz plain flour 2 tsp baking powder 1 tsp vanilla essence 3 tbsp milk Handful of sultanas (optional) Method: 1. Preheat the oven to 190°C/fan 170°C and grease and line a round cake tin. 2. Cream the butter with the sugar until light and fluffy. 3. Beat the eggs into the creamed mixture, one at a time, following each addition with a spoonful of flour. 4. Fold in the remaining flour with the baking powder, then add vanilla essence and milk. Mix well. 5. Stir in the sultanas if used, transfer to the prepared tin and bake for approx 45 mins.
