Porter cake Print E-mail

Ingredients:

140g/5oz margarine

140g/5oz brown sugar

1 cup of Guinness

450g/1 lb sultanas

85g/3oz candied peel

400g/14oz plain flour

½ tsp bread soda

1½ tsp cinnamon

2 eggs, beaten

 

Method:

1. Preheat the oven to 180°C/fan 160°C and grease and line 9" cake tin.

2. Put the margarine, sugar and Guinness into a saucepan and boil gently. Stir the mixture until the margarine is melted and sugar dissolved.

3. Add sultanas and candied peel and simmer for 5 mins. Allow to cool.

4. Sieve the flour, bread soda and cinnamon into a bowl. Make a well in the centre and add the beaten eggs.

5. Add the cooled mixture from the saucepan and mix together quickly and well.

6. Turn into the cake tin and bake for 1½ - 2 hours.
