Ingredients:  450g/1 lb plain flour 2 tsp baking powder 200g/7 oz caster sugar 4 eggs 250g/9oz butter, cubed 1 kg/2lb 3oz eating apples, peeled, cored and coarsely grated 1 tsp cinnamon Handful sultanas Method: 1. Put flour, baking powder, 120g/4½ oz sugar, butter and 4 egg yolks into a bowl and combine with your hands until they come together in a dough. 2. Take 1/3 of the dough and put in the fridge for 15-20 mins. 3. Press the remaining 2/3 of the dough into a large lightly greased tin and cover with apples. 4. Sprinkle with cinnamon and sultanas. 5. Beat the egg whites until stiff, fold in the remaining sugar (80g/2½oz) and spread over the apples. 6. Take the refrigerated dough and grate it coarsely, then sprinkle over the egg whites. 7. Bake at 200°C/fan 180°C for 35-40 mins.
