Buttermilk blueberry muffins |

Ingredients: 250g/9oz plain flour 3 tbsp baking powder 200g/7oz blueberries 1 large egg, beaten 175g/6oz caster sugar 8 tbsp vegetable oil 150g/5½ oz buttermilk (you can substitute with crème fraîche or yoghurt) Method: 1. Preheat the oven to 190°C/fan 170°C and line a muffin tin with paper cases. 2. Put the egg, sugar, oil and buttermilk in a bowl and beat well. 3. Gradually stir in the flour with baking powder and finally the blueberries. 4. Fill the muffin cases and bake in the preheated oven for 20-25 mins.
