Ingredients:  300g/10½ oz plain flour 40g/1½ oz cocoa 80g/3oz icing sugar 2 egg yolks (keep the egg whites for brushing) 180g/6oz butter, softened 750g/1 lb 11oz eating apples, peeled, cored and chopped 100g/3½ oz caster sugar 1 tsp cinnamon 60ml/2fl oz water 30g/1oz walnuts, chopped Method: 1. Put the flour, cocoa, icing sugar and egg yolks into a large bowl. 2. Rub in the butter and combine everything together with your hands to make a smooth pastry. Refrigerate for about 30 mins. 3. While the pastry is resting in the fridge, prepare the filling: Put apples, caster sugar, cinnamon and water into a large pan, cover and gently stew until the apples are soft. Then stir in the chopped walnuts and leave to cool slightly. 4. Preheat the oven to 200°C/fan 180°C and line a large baking sheet with greaseproof paper. 5. Divide the pastry into 4 parts and roll out each part to a long rectangle. 6. Put 2 rectangles on the baking sheet, spread the apple filling on top and cover with the remaining 2 rectangles. Press the edges together, brush the tops lightly with egg whites and bake for 20 mins.
