Wonderfully moist apple & cinnamon cake Print E-mail

Ingredients:  

180g/6oz caster sugar

3 eggs, separated

4 tbsp oil

6 tbsp milk

180g/6oz plain flour

1 heaped tsp cinnamon

2 tsp baking powder

2 eating apples, cut into small pieces

 

Method:

1. Preheat the oven to 210°C/fan 190°C and line a base of round cake tin with baking paper.

2. Beat the sugar and egg yolks for a minute with electric blender, then pour in the oil and milk, still beating.

3. Mix together the flour, cinnamon and baking powder and add to the wet mixture, beating until smooth.

4. Beat the egg whites in a separate bowl until fluffy and gently fold into the mixture, then fold in the apple pieces.

5. Transfer to baking tin and bake in the preheated oven for 20 mins, then turn down the temperature to 180°C/fan 160°C and bake for further 20 mins or until a skewer inserted into the cake comes out clean.
