Strawberry swiss roll Print E-mail

Ingredients:  

5 eggs, separated

150g/5½ oz icing sugar

150g/5½ oz plain flour

2 tsp baking powder

Strawberry jam

Icing sugar to sprinkle

 

Method:

1. Preheat the oven to 180°C/fan 160°C and line a swiss roll tin with greaseproof paper.

2. Beat the egg whites until soft peaks form, then gradually beat in the icing sugar until glossy and firm.

3. Gently stir in the egg yolks and finally sift in the flour and baking powder.

4. Pour into the tin, level the surface and bake for 18-20mins.

5. Sprinkle a clean tea towel with icing sugar and turn the hot swiss roll out on the tea towel.

6. Remove the greaseproof paper from the top of the swiss roll and roll it up together with the tea towel. Leave to cool, then carefully unroll.

7. Spread with strawberry jam and roll up, sprinkle with some more icing sugar and cut to slices.
