Ingredients:
350g/12oz brown sugar 350g/12oz margarine 6 eggs 350g/12oz plain flour 6 tsp baking powder 6 tsp instant coffee mixed with 4 tsp boiling water Icing: 220g/8oz icing sugar, 6 tsp cold water, 2 tsp instant coffee mixed with 2 tsp boiling water Method: 1.Preheat the oven to 200°C/fan 180°C and grease and base line of 2 cake tins. 2. Put the brown sugar, margarine and eggs into a large bowl and beat well. 3. Add flour and baking powder, beat until combined and finally add in the dissolved coffee. 4. Divide between the prepared cake tins and bake for approx 25 mins or until a skewer inserted into the cake comes out clean. 5. Leave in the tins for 5-10 mins and then turn to a wire rack to cool down. 6. For the icing mix together all the ingredients, sandwich the cakes together with half of the icing and spread the remaining icing evenly over the top of the cake.
