Ingredients: 3 eggs 250g/9oz caster sugar 250g/9oz cream cheese 250g/9oz plain flour 4 tsp baking powder 100ml/3½ fl oz vegetable oil 2-3 tsp cocoa powder
Method: 1. Preheat the oven to 200°C/ fan 180°C and grease and flour a small cake tin. 2. Beat together eggs, sugar and cream cheese until smooth. 3. Gradually add flour mixed with baking powder, mix well and stir in the vegetable oil. 4. Put 3 or 4 tbsp of the mixture into a small bowl and mix with the cocoa. 5. Pour the mixture into the prepared tin and spoon the cocoa mixture on top. Gently dip and twist a fork into the mixture to create the marble effect (do not overmix!). 6. Bake in the preheated oven for 30-40 mins or until a skewer inserted into the cake comes out clean.
