Baked apple cheesecake Print E-mail

Ingredients:  

For the base:
1 egg, separated
60g/2oz unsalted butter, softened
60g/2oz caster sugar
½ tsp vanilla essence
100g/3½ oz plain flour
1 tsp baking powder
Filling:
500g/1 lb 2oz cream cheese
40g/1½ oz cornflour
3 tbsp vegetable oil
1 egg plus 1 egg yolk
½ tsp lemon zest
150g/5½ oz caster sugar
1 tsp vanilla essence
50g/2oz sultanas
800g/1 lb 12oz apples, peeled, cored and sliced

Method:
1. Preheat the oven to 200°C/fan 180°C and line a base of 9½ inch round tin with baking paper.
2. To make the filling mix together cream cheese, cornflour, oil, egg, egg yolk, lemon zest, caster sugar and vanilla essence. Stir in the sultanas and apples and refrigerate.
3. For the base, separate the egg and whisk the egg white until soft peaks form. In another bowl mix together butter and sugar, then add the egg yolk, vanilla essence, flour and baking powder. Finally stir in the egg white. Spread the mixture on the base of the prepared tin and bake for 10 mins.
4. Pour the filling onto the pre-baked base, level the surface and return to the oven for another 40-50 mins until set.
