Vanilla cake with lemon drizzle |

Ingredients: 2 cups plain flour 1 cup sugar 75g/2½ oz cornflour 4 tsp baking powder 4 eggs 1 tbsp vanilla essence 100ml/3½ fl oz vegetable oil 100ml/3½ fl oz milk 3 tbsp lemon juice Icing sugar
Method: 1. Preheat the oven to 200°C/fan 180°C and grease and line a base of 9½ inch round tin with baking paper. 2. Put the flour, sugar, cornflour and baking powder into a large bowl. 3. Add eggs, vanilla essence, oil and milk and mix until smooth. 4. Transfer to the prepared cake tin and bake for approx 45-50 mins or until a skewer inserted in the middle of the cake comes out clean. Leave to cool and remove from the tin. 5. Put the lemon juice into a small bowl and keep adding icing sugar until the icing has a consistency of honey. Drizzle over the cake and serve.
