Ingredients: (makes 8) 2 tsp dried yeast 1 tsp sugar 125ml/4½ fl oz warm milk 250ml/9 oz warm water 600g/1lb 5½oz plain flour 1 tsp salt 2 tbsp olive oil To sprinkle: 1 tbsp cornflour + 2 tsp plain flour
Method: 1. Combine yeast, sugar, milk and water in a small bowl. Cover and stand in a warm place for about 10 minutes or until frothy. 2. Sift flour and salt into a large bowl, add combined yeast mixture and oil; mix into a soft dough. 3. Knead dough on a floured surface for 10 minutes until smooth and elastic. Place dough in an oiled bowl and cover tightly, stand in a warm place for about 30 minutes or until doubled in size. 4. Turn dough onto a floured surface, knead until smooth. Divide into 8 pieces and shape each piece into a ball. 5. Put the rolls on a greased oven tray, cover loosely with a tea towel and stand in a warm place about 20 minutes or until doubled in size. 6. Brush rolls with a little extra milk and sprinkle with combined cornflour and extra flour. 7. Put the rolls in a cold oven, turn to 190°C/fan 170°C and bake for approx 25-30 mins or until rolls are browned and sound hollow when tapped.
