Ingredients: 250g/9oz plain flour 2 tsp baking powder 85g/3oz butter 150g/5½ oz brown sugar 2 eggs 3 ripe bananas, mashed 100ml/3½ fl oz plain yoghurt 85g/3oz walnuts, chopped
Method: 1. Preheat the oven to 200°C/fan 180°C and grease and line a 2lb loaf tin. 2. Put the flour with the baking powder into a bowl and rub in the butter. 3. Stir in the sugar, then add eggs, mashed bananas and yoghurt and stir until combined. 4. Stir in the chopped walnuts, transfer the mixture to the prepared tin and bake for about an hour or until a skewer inserted in the middle of the cake comes out clean.
