Ingredients: 350g/12oz plain flour 4 tsp baking powder 225g/8oz caster sugar 300ml/ ½pt milk 150ml/ ¼pt oil 2 eggs 1 tin plums in syrup Cinnamon
Method: 1. Preheat the oven to 180°C and grease a large rectangular baking dish. 2. Put all the ingredients except the plums and cinnamon into a bowl and beat with a blender until smooth. Pour into the baking dish. 3. Drain the plums, cut them in half and remove the stones. Then arrange them on top of the mixture. 4. Sprinkle with cinnamon and bake for 20-25 mins or until a skewer inserted in the middle of the cake comes out clean. 5. Leave to cool, cut into squares and serve sprinkled with icing sugar.
