Ingredients: 350g/12oz plain flour 150g/5½ oz rye flour 380ml/13 fl oz lukewarm water 1 tbsp white vinegar 3 tbsp oil 1 tsp sugar 2.5 tsp salt 2 tsp dried yeast 2 tbsp caraway seeds + extra to sprinkle
Method: 1. Put all ingredients into a large bowl and bring together to make a dough. 2. Knead for 10 mins (this is best done in a mixer with a dough hook), then cover the bowl with cling film and leave in a warm place for 30-60mins to rise. 3. Lightly grease a baking sheet. 4. On a floured surface knead the dough briefly again and shape into a loaf. Put on the baking sheet, cover with a tea towel and leave to rise again for an hour. 5. Preheat the oven to 220°C and bake the bread for 10mins, then lower the temperature to 175°C and bake for further 30mins or until a skewer inserted into the bread comes out clean.
