Ingredients: 300g/10½oz caster sugar 100g/3½oz butter, softened 3 eggs 250g/9oz plain flour 4 tsp baking powder 40g/1½oz cocoa 300g/10½oz eating apples, peeled, cored and finely grated Strawberry, raspberry or cherry jam Icing: Lemon juice and icing sugar
Method: 1. Preheat oven to 175°C and grease and line a base of round cake tin with baking paper. 2. Put the caster sugar, butter and eggs into a bowl and beat well. 3. Gradually add flour mixed with baking powder and cocoa. 4. Stir in the grated apples and transfer into the prepared tin. 5. Bake for approx 40-50 mins or until a skewer inserted into the middle of the cake comes out clean. 6. Leave to cool and remove from the tin. Slice into two layers, spread the bottom layer with jam and put together again. 7. For the icing mix together a small amount of lemon juice with some icing sugar until you get a nice thick spreadable consistency. Spread over the cake and leave to set for a few mins before serving.
