Ingredients:  
3 eggs
250g/9oz caster sugar
250ml/9 fl oz milk
150ml/ ¼ pt oil
3 tbsp cocoa powder
350g/12oz plain flour
4 tsp baking powder
3 bananas, mashed

Method:
1. Preheat the oven to 175°C and grease a 14 x 9 inch baking dish.
2. Beat the eggs with sugar for a few minutes until pale and increased in volume.
3. Mix together flour, baking powder and cocoa and gradually mix into the egg mixture, together with milk and oil.
4. Finally mix in the mashed bananas.
5. Transfer to the baking dish and bake for approx 25-30 mins or until a skewer inserted in the middle comes out clean. Leave to cool, cut into squares and dust with icing sugar.
