Ingredients: 3 eggs, separated 250g/9oz caster sugar 125ml/4½ fl oz oil 250ml/9 fl oz water 340g/12oz plain flour 4 tsp baking powder 1 tbsp cocoa powder ½ tsp cinnamon 100g/3½ oz raisins 75g/2½ oz chopped walnuts 3 pears, peeled and finely diced
Method: 1. Preheat the oven to 180°C and line a 9 inch square tin with baking paper (or use a round tin of similar size) 2. Beat the egg yolks with sugar in a large bowl, then add oil and still beating, slowly pour in the water. 3. Mix together flour, baking powder, cocoa and cinnamon and add to the wet mixture, beat until smooth. 4. Stir in raisins, walnuts and pears. 5. Beat the egg whites until stiff and carefully fold into the mixture. Transfer to the prepared tin and bake for 45-50 mins or until a skewer inserted in the middle of the cake comes out clean.
