Ingredients: 400g/14oz plain flour 140g/5oz icing sugar 50g/2oz butter, cut into cubes 2 eggs, lightly beaten 2 tbsp honey 1 tsp baking soda 1 tsp ground cinnamon 1 tsp ground ginger ½ tsp allspice ½ tsp ground cloves Smarties to decorate
Method: 1. Mix all dry ingredients in a large bowl, add the rest of the ingredients and make into a dough. Or alternatively let your food processor do the hard work: Put everything in a food processor, whizz for a few seconds, turn out onto a worktop and press together to make a dough. 2. Wrap the dough ball into a cling film and let it rest in the fridge overnight. 3. Preheat the oven to 160°C and line a baking sheet with baking paper. 4. Roll the dough ¼ inch thick and cut into desired shapes. Transfer onto the prepared baking tray, decorate with smarties and bake in the preheated oven for 8-10 mins. Remove from the baking sheet immediately and leave to cool. Store in a tin.
