Ingredients: 300g/10½ oz plain flour 2 tsp baking powder 175g/6oz caster sugar 2 small tubs fruit yoghurt 100ml/3½ fl oz oil 3 eggs ½ bar cooking chocolate, chopped ½ tsp vanilla extract (optional) Method: Preheat the oven to 200°C/fan 180°C and line a muffin tin with paper cases. In a bowl beat together eggs and sugar, add oil and yoghurts and mix together. Add flour with baking powder, mix together and add vanilla extract and chocolate (you can use sultanas or chopped nuts instead of chocolate). Spoon the mixture into the prepared muffin cases and bake for 20-25 mins until well risen and golden.
