Apple and raisin cake Print E-mail

Ingredients: 

175g/6oz caster sugar

150ml/¼ pt oil

3 eggs

350g/12oz self raising flour

1 tsp cinnamon

3 eating apples, peeled, cored and diced into small pieces

75g/3oz raisins 

 

Method:

1. Preheat the oven to 200°C/fan 180°C and grease and base line a cake tin.

2. Pour the oil into a bowl and add the sugar. Beat until well blended.

3. Gradually beat in the eggs until the mixture has increased in volume.

4. Add the flour and cinnamon and stir into the mixture.

5. Add apples and raisins and mix thoroughly.

6. Transfer to the prepared tin and bake for 45 – 60 mins until golden brown. Leave to cool and serve.
