Double cheese chicken breasts |

Ingredients: 4 chicken breast fillets 150g/5½ oz Brie cheese, grated 200g/7oz blue cheese, grated Small tin of mushrooms 1 onion, finely chopped Bunch of fresh herbs of your choice, chopped 1/3 cup olive oil 4 cloves garlic, crushed Salt Method: 1. Drain the mushrooms and chop them roughly, then mix together with brie cheese, blue cheese, onion and half of the chopped herbs. 2. Slit each of the breast fillets on one side with a sharp knife to make a pocket (be careful not to cut through) and fill with the cheese mixture. Secure with cocktail sticks. 3. Mix olive oil, garlic, salt and the rest of the herbs to make a marinade and spread all over the filled chicken fillets. 4. Leave to marinate for about an hour and then grill until the fillets are cooked through.
