Chocolate cheesecake Print E-mail

Ingredients:  

200g/7oz bourbon biscuits, crushed

75g/3oz unsalted butter, melted

500g/1 lb 2oz cream cheese

140ml/5 fl oz fresh cream

125g/4 ½ oz icing sugar

175g/6oz plain chocolate, melted

Ice cream and chocolate sauce to serve (optional)

 

Method:

1. Mix together the crushed biscuits and melted butter and spoon the mixture into a round cake tin (base lined with baking paper). Push down the crumbs firmly and evenly and chill for 15 mins.

2. Put the cream cheese, fresh cream and icing sugar in a large bowl and whisk together until smooth and firm.

3. Add the melted chocolate and whisk again until well combined.

4. Spoon the cheese mixture on top of the chilled biscuit base, level the top and chill for at least 2 hours. Serve with ice cream and drizzled with ready made chocolate sauce.
