Ingredients: (Serves 4)  2 large eating apples, peeled, cored and chopped 40g/ 1½oz butter 110g/4oz caster sugar ¼ tsp vanilla extract ¼ tsp cinnamon 2 eggs, separated
Method: 1. Preheat the oven to 200°C/fan 180°C and lightly grease 4 ramekins. 2. Put the apples, butter and 1 tbsp of the sugar into a small pan and gently cook for 10-15 mins until soft. Take off the heat and stir in the cinnamon. 3. Beat the egg whites until stiff, gradually adding remaining sugar and vanilla extract. 4. Stir the egg yolks into the apples and divide between the prepared ramekins. 5. Top with the egg whites and bake for 10-15 mins until golden. Serve warm.
