Ingredients: (Serves 4) 250ml/9 fl oz water 100g/3 ½oz sugar 4 plums ½ tsp cinnamon 40g/1 ½oz custard powder 500ml/17 ½fl oz milk 2 tbsp sugar 4 chocolate sandwich biscuits (or your favourite biscuits) Drinking chocolate to sprinkle
Method: 1. Put the water together with 100g sugar in a pan and bring to the boil. 2. Cut each plum in 8 pieces and add to the pan together with cinnamon. Simmer on a low heat for 15 mins. 3. Pour two thirds of the milk into another pan together with 2 tbsp sugar and bring to the boil. In a cup mix together custard powder with the remaining milk and slowly pour into the hot milk, stirring continuously until the custard thickens. 4. Take the plums out of the pan with a slotted spoon and divide half of them between 4 bowls or glasses. Pour over half of the custard, put a chocolate sandwich biscuit in each bowl and cover with the remaining custard. Top with the remaining plums and sprinkle with some drinking chocolate. Eat while still warm (the chocolate filling in the biscuit will melt into the hot custard…mmmmm….)
Tip: Save the delicious plum syrup and use it in a simple fruit salad
