Ingredients: (Serves 4) 675g/1½ lb cod or haddock fillets 1 onion, finely chopped Salt, pepper Few drops of lemon juice 150ml/ ¼pt water 275ml/ ½pt milk 25g/1oz butter 1 tbsp flour 8 potatoes, cooked and mashed Method: 1. Wash the fillets and place in a saucepan with onion, lemon juice, water, milk and seasoning. 2. Cover, bring to boil and cook gently for 10 mins. 3. Drain the fish, saving the stock. 4. Melt the butter in a saucepan, add flour and cook for 2 mins, stirring continuously. 5. Keep stirring and gradually add the fish stock. 6. Bring to the boil, reduce the heat and cook for another 5 mins. 7. Grease a pie dish and add a little sauce. Place the fillets in the dish and cover with remaining sauce. 8. Spoon the mashed potatoes on top and bake at 200°C/fan 180°C for 10-20 mins.
