Ingredients: (Serves 4) 675g/1½ lb cod fillets Tomato sauce: 1 tsp oil 1 onion, finely chopped 1 clove garlic, crushed 1-2 celery sticks, finely chopped 1 tin chopped tomatoes Salt, pepper 1 tsp sugar Topping: 1 tsp vegetable oil 50g/2oz breadcrumbs (from 2 slices of bread) 25g/1oz grated cheddar Method: 1. To make the tomato sauce heat the oil in a small saucepan, stir in the onion, garlic and celery and cook for 2-3 mins until the vegetables soften but have not become coloured. Add the tomatoes, sugar, salt and pepper and bring to boil, stirring continuously. Cover and simmer for 10-15 mins, stirring occasionally. 2. Meanwhile prepare the topping. Heat oil in a small saucepan, remove from heat and stir in the breadcrumbs, then mix in the grated cheese. 3. Preheat the oven to 200°C/fan 180°C 4. Wash and dry the fish and put in a greased shallow ovenproof dish. 5. Pour the tomato sauce over the fish, sprinkle the topping evenly all over and bake for 30 mins until the topping is crisp and brown.
