Baked stuffed fish fillets |

Ingredients: (Serves 4) 8 small fillets of fish 50g/2oz breadcrumbs (from 2 slices of bread) 1 onion, finely chopped 1 tbsp finely chopped parsley 1 tsp oil A little lemon juice Salt, pepper Method: 1. Preheat the oven to 180°C/fan 160°C and grease a baking tray. 2. Clean the fish and dry in kitchen paper. 3. Mix breadcrumbs, onion, parsley, oil, lemon juice, salt and pepper in a small bowl. 4. Lay 4 fillets on the baking tray, skin side down and spoon stuffing carefully onto each fillet. Flatten well down and cover with the other 4 fillets. 5. Cover with foil and bake for 20-30 mins (depending on size and thickness of fish).
