Ingredients: (Serves 4) 2 leeks, sliced ½ fresh pineapple, peeled and diced 750g/1 lb 10½ oz fish fillets 1 tbsp flour 4 tbsp oil 2-3 tbsp soy sauce 1 tin chopped tomatoes Pinch of chilli Salt, pepper Method: 1. Cook the leeks in a pan of boiling water for 1 minute, then drain. 2. Cut the fish fillets into bite sized pieces, season with salt and pepper and sprinkle with flour. 3. Heat 3 tbsp oil in a large pan and stir fry the fish for a few mins, then remove from the pan and set aside. 4. Add the remaining oil to the pan and fry the pineapple for 2-3 mins, then add the soy sauce, tomatoes and leeks. Cover and cook for 4-5 mins. 5. Season with salt, pepper and chilli and add the fish. Cover, cook for another 4 mins and serve.
