Ingredients: (Serves 4) 400g/14oz potatoes, diced 1 onion, sliced 250g/9oz mushrooms 250g/9oz green beans 50g/2oz butter, sliced 600g/1 lb 5oz fish fillets, diced 5 tbsp natural yoghurt 1 tbsp lemon juice Salt, pepper Method: 1. Preheat the oven to 200°C/fan 180°C and grease an ovenproof dish. 2. Put the potatoes, onion, mushrooms and green beans into the dish and season well with salt and pepper. 3. Add a splash of water and arrange butter slices on top. 4. Cover and bake in the preheated oven for approx 40 mins until nearly soft. Then arrange the diced fish fillets on top and bake for further 15 mins. 5. Remove from the oven, stir in the yoghurt and lemon juice and serve.
