Fish fillets with lemon butter and capers Print E-mail

Ingredients: (Serves 4)

800g/1 lb 12oz fish fillets

2 tbsp plain flour

6 tbsp butter

Juice and zest of 1 lemon

Handful of fresh parsley, finely chopped

1 tbsp capers

Salt, pepper

 

Method:

1. Season the fish fillets with salt and pepper and sprinkle with flour.

2. Heat 2 tbsp butter in a large pan and fry the fillets for 2-3 mins each side until cooked through, then remove from pan.

3. Wipe the pan with a kitchen towel, then pour in the lemon juice and add the remaining 4 tbsp butter. Stir until the butter has melted.

4. Add lemon zest, parsley and capers, season with salt and pepper.

5. Return the fish fillets to the pan and heat through. Serve with potatoes.
