Baked fish fillets with spinach Print E-mail

Ingredients: (Serves 4)

600g/1 lb 5½oz white fish fillets

Lemon juice

1 tbsp oil

1 onion, finely chopped

400g/14oz frozen spinach, thawed

200g/7oz cheddar slices

50g/2oz peanuts, chopped

Salt, pepper

 

Method:

1. Drizzle the fish fillets with lemon juice, season with salt and pepper and put in the fridge for half an hour.

2. Preheat the oven to 200°C/fan 180°C and grease an ovenproof dish.

3. Heat the oil in a pan, add onion and fry for 2 mins, add spinach, season with salt and pepper, cover and cook for 5 mins. Then uncover and increase the heat until all liquid has evaporated.

4. Arrange the fish fillets on the bottom of the ovenproof dish, cover with spinach and cheese slices, sprinkle with chopped peanuts and bake for approx. 20 mins. Serve with chips/wedges or white crusty bread.
