Ingredients: (Serves 2-3) 4 large potatoes, peeled, sliced and cooked 200g/7oz baby spinach 2 tbsp butter 1 small onion, chopped 2 tbsp flour 200ml/7 fl oz milk 1 egg, lightly beaten 100g/3½ oz grated cheddar 1 large tin of tuna, drained 1 pot crème fraîche Salt, pepper
Method: 1. Put the baby spinach in a large pan with a little bit of boiling water, cover and simmer for 2 mins; drain. 2. Melt the butter in a saucepan, add onion and cook for 2-3 mins. Add flour and stir well, then gradually pour in the milk, stirring all the time. Bring to the boil, lower the heat and simmer for 5 mins. 3. Stir in the egg, half of the grated cheese, tuna and finally the wilted spinach. Season with pepper. 4. Preheat the oven to 200°C/fan 180°C and lightly grease a large ovenproof dish. 5. Transfer the tuna mixture into the dish and cover with potato slices. Season with salt and spread the crème fraîche on top. Sprinkle with the remaining cheese and bake for 30 mins.
