Smoked fish pie Print E-mail

Ingredients: (Serves 3-4)  
650g/1 lb 7oz smoked coley or haddock
Milk
10 potatoes
2 handfuls of mixed frozen veg
2 tbsp butter
2 tbsp plain flour

Method:
1. Put the fish in a large pan and cover with milk. Bring to the boil and simmer for approx 8 mins until cooked. Remove the fish and pour the milk through a sieve into a bowl.
2. Flake the fish and put into a large ovenproof dish.
3. Put the frozen veg in a small pan of boiling water and simmer for 3-4 mins, drain and add to the flaked fish.
4. Melt the butter in a small pan, add flour and stir well. Gradually pour in about 300ml/ ½pt of the reserved milk, whisking until smooth. Simmer for 5 mins, then pour over the fish and veg.
5. Cook the potatoes as usual, then beat with a hand blender, adding about a cup of milk, until smooth.
6. Spoon the potato purée over the fish and bake at 200°C for half an hour until golden.
