Ingredients: (Serves 4) 350g/12oz cooked white fish 6 potatoes, cooked and mashed 25g/1oz melted butter 2 tbsp chopped parsley 2 eggs 75g/3oz breadcrumbs (from 3 slices) 2 tbsp plain flour Salt, pepper Oil for frying Method: 1. Put the flaked fish, potatoes, butter, parsley and 1 beaten egg in a bowl, season with salt and pepper and mix gently with a fork. Refrigerate for 30 mins. 2. Divide the mixture into 8 portions and shape each into a flat round. 3. Dip the cakes into the second beaten egg and coat in breadcrumbs. 4. Fry the fish cakes until golden brown on both sides.
