Pork & bean pot Print E-mail

Ingredients: (Serves 4)  

2 tbsp oil

500g/1lb 2oz pork chops, cut into cubes

2 onions, chopped

Salt, pepper

1 chorizo sausage (or any other spicy sausage), cut into chunks

3 tbsp ketchup

2 tins baked beans

4 cloves garlic, crushed

½ tsp caraway seeds, crushed

Pinch of chilli

1 pepper, cut into thin strips

 

Method:

Heat the oil in a large pan, put in the onions and meat, season with salt and pepper and fry for a few minutes, stirring continuously until there is no pink meat. Add few tbsp of water and the rest of the ingredients, stir, cover with lid and cook for about 15 mins on a low heat, stirring occasionally (you can add more water if the mixture is sticking to the bottom of the pan). Serve with potatoes.
