Ingredients: (Serves 4)
500g/1 lb 2oz diced pork 2 tbsp soy sauce 2 tbsp oil Salt, pepper 1 tsp thyme 2 onions, chopped 1 apple, peeled, cored and diced 1 red pepper, cut into strips 250ml/9fl oz white wine 2 tbsp fresh parsley, chopped Method: 1. In a cup mix soy sauce and oil, add salt, pepper and thyme and pour over the meat. Add the onions and leave it marinating for a few minutes. 2. Heat a large pan and fry the meat mixture for 2 mins, stirring continuously. Pour in the wine, cover with lid and cook on a low heat for 10 mins. 3. Then add the apples and pepper and cook for another 5 mins. 4. Add parsley, season to taste with salt and pepper and serve with rice.
