Gnocchi and spinach bake Print E-mail

Ingredients: (Serves 3-4) 

2 x 500g/1 lb 2 oz packs gnocchi (you can use 1 x 500g pack of pasta instead)

125g/4½ oz pack bacon bits

2 cloves garlic, thinly sliced

300g/10½ oz frozen spinach, thawed

227ml/8 fl oz fresh cream

Salt

100g/3½ oz grated cheese

 

Method:

1. Preheat the oven to 210°C/fan 190°C.

2. Cook gnocchi (or pasta) according to the instructions on pack.

3. In the meantime heat a small deep pan and fry bacon bits for a few mins until crispy.

4. Add garlic and cook for another minute.

5. Pour in the cream, add spinach and cook on a low heat for 10 mins.

6. Season the creamed spinach with salt and stir into the cooked gnocchi (or pasta).

7. Transfer to a baking dish, top with grated cheese and bake for 10-15mins until the cheese is golden.
