Ingredients: (Serves 4) 450g/1 lb pork, cut into thin slices 1 tbsp oil 1 onion, sliced 2 carrots, cut into thin strips 6 mushrooms, sliced 1 pepper, cut into thin strips 1 clove garlic, sliced 150ml/ ¼pt boiling water ½ vegetable stock cube 2 tbsp soy sauce 2 tsp cornflour Method: 1. Heat the oil in a large frying pan, add the pork and fry until well browned. 2. Add onion and carrots to the pan and fry for 2-3 mins, stirring continuously. 3. Add mushrooms, pepper and garlic and continue frying for 2-3 mins. 4. Dissolve the vegetable stock cube in boiling water and mix with soy sauce and cornflour to a smooth paste. Then pour in the pan. 5. Bring to the boil stirring continuously and simmer for 5 mins. 6. Serve with rice or noodles.
