Pork chops with mushroom relish |

Ingredients: (Serves 4)  4 pork chops 2 cloves garlic, crushed 1 tbsp olive oil 1 tbsp lemon juice Small handful of fresh chopped rosemary Relish: 150g/5oz mushrooms 2 tbsp olive oil 1 clove garlic, crushed 2 tomatoes, chopped Small handful of fresh chopped basil 1 tbsp balsamic vinegar Salt Method: 1. To make the relish put mushrooms and olive oil in a bowl and mix to coat. Heat a griddle pan and cook the mushrooms for 4-5 mins. Cool slightly, chop and transfer to a bowl. Add garlic, tomatoes, basil and vinegar and season. 2. Mix garlic, olive oil, lemon juice and rosemary and brush the mixture over the chops. 3. Fry the chops for about 10 mins until browned and cooked through. 4. Transfer to serving plates, top with the warm mushroom relish and serve with mashed potatoes.
