Lamb and vegetable pilaff |

Ingredients: (Serves 4)  400g/14oz minced lamb 1 tbsp oil 250g/9oz frozen mixed vegetables 2 tbsp curry paste 150ml/ ¼pt water 500g/18oz cooked rice Salt, pepper 4 hard boiled eggs, peeled and halved Method: 1. Heat the oil in large pan, add the minced lamb and stir fry for 3-4 mins until lightly browned. 2. Add the mixed vegetables, curry paste and water and cook for 5-6 mins until the vegetables are tender and the liguid is absorbed. 3. Add rice and continue cooking for another 3 mins. 4. Season to taste and serve topped with the hard boiled eggs.
