Sausage and pepper tortilla Print E-mail

Ingredients: (Serves 4)  

225g/8oz potatoes, peeled and cut into chunks

1 tbsp olive oil

4 sausages

1 red, 1 green and 1 yellow pepper, cut into strips

6 eggs, beaten

Handful of parsley, chopped

Salt, pepper

 

Method:

1. Cook the potatoes in a pan of salted boiling water until just tender.

2. In the meantime heat the oil in a frying pan and cook the sausages for 8-10 mins until cooked through. Remove from pan and slice thickly.

3. Add peppers to the pan and cook, stirring for 5 mins, then return the sausages to the pan and add the cooked potatoes.

4. Preheat the grill to high.

5. Stir the parsley into the beaten eggs, season with salt and pepper and pour over the sausage mixture. Cook for 5 mins until the tortilla is set underneath.

6. Place the tortilla under the grill for another 5 mins until set on top. Serve cut into wedges.
