Cottage pie Print E-mail

Ingredients: (Serves 4)  

1 tbsp oil

2 onions, finely chopped

2 garlic cloves, finely chopped

600g/1 lb 5½ oz minced beef

2 carrots, finely chopped

2 tbsp plain flour

250ml/9 fl oz water

1 beef stock cube

2 tbsp ketchup

1 tsp Worcestershire sauce

Salt, pepper

600g/1 lb 5½ oz potatoes

55g/2oz butter

Little milk

Olive oil or melted butter to drizzle

 

Method:

1. Heat the oil in a large pan and fry the onion until softened, then add the garlic and stir well.

2. Add meat and cook, stirring continuously, until the meat is browned.

3. Add carrots and season with salt and pepper.

4. Add flour and stir well, then pour in the water.

5. Add stock cube, ketchup and Worcestershire sauce, cover and simmer for 25-30 mins.

6. In the meantime cook the potatoes, then mash them with butter and milk and season to taste.

7. Preheat the oven to 220°C/fan 200°C.

8. Transfer the meat mixture into an ovenproof dish and spread the potato mash on top. Drizzle the top with olive oil or melted butter.

9. Bake the pie for 15-20 mins until golden brown (or alternatively brown under the grill).
