Chilli beef wrap Print E-mail

Ingredients: (Serves 4)  

2 tbsp oil

450g/1 lb round steak, sliced

1 onion, cut into thin wedges

1 garlic clove, crushed

2 red chillies, seeded and sliced

1 can red kidney beans, drained

1-2 tsp chilli powder

1 can chopped tomatoes

½ beef stock cube

2 tbsp tomato puree

Salt, pepper

4 soft flour tortillas, warmed

Avocado slices, sour cream and lime wedges to serve

 

Method:

1. Heat the oil in a deep pan and fry the steak for 5-8 mins until browned.

2. Add onion, garlic and chillies and cook, stirring, for 3-5 mins.

3. Add beans, chilli powder, tomatoes, stock cube and tomato puree.

4. Bring to the boil, stirring, then reduce the heat and simmer for 20 mins until the steak is tender.

5. Season to taste and spoon onto the warmed tortillas. Fold and serve with avocado slices, sour cream and lime wedges.
