Sausage & lentil bake Print E-mail

Ingredients: (Serves 2)  

1 tbsp oil

6 sausages

½ onion, chopped

½ tsp ground cumin

400g/14oz can chopped tomatoes

50g/2oz red split lentils

150ml/ ¼pt chicken stock

500g/1 lb 2oz potatoes, peeled & sliced

Salt

 

Method:

1. Heat the oil in a pan, add sausages and cook for 5-8 mins, turning frequently. Then remove from the pan and cut into bite-sized pieces.

2. Add onion to the pan and cook for 3-4 mins, then add tomatoes, cumin, lentils and stock and bring to the boil.

3. Reduce the temperature, add the chopped sausages, cover and simmer for approx 15 mins until the lentils are soft. Season with salt.

4. In the meantime parboil the potatoes in boiling water for 5 mins.

5. Preheat the oven to 200°C/fan 180°C and lightly grease 2 shallow oven-proof dishes (or 1 large).

6. Arrange some potato slices on the bottom of the dishes, season with salt, spoon the sausage mixture on top and cover with the remaining potato slices, season with salt again. Drizzle with a little bit of oil and bake for 40 mins until golden.
