Ingredients: (Serves 4)  4 courgettes 1 small tin tomato puree 2-3 cloves garlic, crushed 1 tbsp thyme 1 tsp icing sugar 12 slices smoked pancetta 1-2 mozzarella balls, sliced Salt, pepper, chilli powder Method: 1. Put the courgettes into a pan of boiling water and cook for 4-5 mins. Drain and cool under running water. 2. Mix together tomato puree, garlic, thyme, sugar, salt, pepper and a pinch of chilli. 3. Slit each courgette twice (lengthways) and spread with the tomato mixture. 4. Wrap each courgette in 3 slices of smoked pancetta, arrange on a baking dish and bake at 200°C/fan 180°C until golden. 5. Put the sliced cheese on top of the courgettes and return to the oven until the cheese is melted.
