Sausage & leek bake Print E-mail

Ingredients: (Serves 2)  

4 potatoes, sliced

1 tbsp oil

6 garlic & herb sausages

1 leek, sliced

300ml/ ½ pt vegetable stock

2 tbsp apple sauce

2 tbsp lemon juice

2 tbsp cornflour mixed with 4 tbsp cold water

50g/2oz grated cheese

 

Method:

1. Put the potatoes in a pan of boiling water and simmer for 5 mins; drain.

2. Heat the oil in a large pan, add sausages and cook, turning frequently for 5-8 mins until golden. Remove from the pan and cut into large chunks.

3. Add the leek into the pan and gently cook for 3-5 mins.

4. Return the sausages into the pan, pour in the stock and bring to the boil.

5. Add apple sauce, lemon juice and mix well.

6. Stir in the cornflour mixed with water and keep stirring until the sauce thickens.

7. Preheat the oven to 200°C/fan 180°C.

8. Divide the mixture between 2 shallow ovenproof dishes, cover with potato slices, sprinkle with grated cheese and bake for 20-25 mins until golden.
